Yerba Mate is a traditional herbal drink made from the leaves of the plant scientifically known as "Ilex paraguariensis", an evergreen plant native to South America, especially in countries like Argentina, Brazil, Paraguay, and Uruguay. It is also a popular drink in the Levant region, particularly in Syria and Lebanon.

The leaves are dried, ground, and then steeped in hot water (not boiling). The infusion is typically drunk through a metal straw called a "Bombilla" from a traditional gourd called a "calabash" or "mate cup".
